Zucchini grown in our own garden, plus onions, peppers, and spices make this healthy, thick, mild vegetable salsa.
Even though we call this a salsa because it makes a wonderful chip dip, it is often used as a base for stews. Delicious when mixed in meatloaf, meatballs, or stir fry.
For a great main course, line a baking dish with meat (such as chicken breast) and pour the jar of salsa over the top and bake. It creates a thick vegetable tomato sauce and keeps meat tender.
