We chop into tiny pieces red, green, yellow and orange sweet peppers, then float them in cider vinegar. Looks like a Christmas tree in a jar. Such an impressive and delicious jelly on any cheese board, on a brick of cheese, or melted on Brie. Mix with sour cream to create a veggie dip. Adds a sweet pepper flavor to any stir fry. Also yummy when added to meats as a glaze.
